A lovely sumptuous and busty heirloom tomato arrived in my Terra Organics box this week. It was nearly bursting out of its skin, so I put it to immediate use. Lucky me I’d stopped by Tacoma’s Corina’s bakery on the way home from work and purchased a loaf of their rosemary bread and baguette. Yet more heavenly goodness. I’m not normally a fan of crust on rustic bread, but this crust looked buttery-crunch and there was just the right amount of (kosher?) salt and herbs sprinkled across the top that I actually munched on the loaf’s ends while my lovely slices of bread topped with olive oil topped with mozzerella topped with heirloom tomato topped with kosher salt baked away in the oven. Mmmm … did you here that? If not …
Rave Review Sandwiches
1. Slice a loaf of rustic bread
2. Dust with olive oil
3. Place slice of mozzerella on bread
4. Place hunk of heirloom tomato on cheese
5. Sprinkle coarse or kosher salt on tomato
6. Bake in oven (about 350) until cheese is melted according to taste
